Quick Gazpacho

I had nothing planned for lunch today. I needed something fast and healthy. I looked in my fridge and found the makings for a quick and yummy gazpacho. Makes 6 cups. 43 calories per serving. Seriously, I at 2/3 of it for lunch and had the rest with dinner.

3 small Roma Tomato, halved
2 bottle (11.5 fl oz), Spicy Hot Vegetable Juice
.5 small onion halved
1 cucumber, peeled and quartered.
A dash of garlic powder

Place all of the ingredients into a blender. Pulse until the vegetables are ground into small pieces. Soup should be chucky, but still soupy. Top with croutons or better yet, roasted chickpeas!
